Ouillé Savagnin from a single Keuper marl vineyard in Buvilly — topped up for six years before bottling. Lemon meringue, grapefruit, hazelnut, and a salty, almost chewable finish. One of the most remarkable Chassagnes Tony has made.
Savagnin • Vin de France • Ouillé • 6 years élevage
Philippe Bornard founded the domaine in Pupillin in 2005, next door to the legendary Pierre Overnoy, and retired in 2017 leaving it to his son Tony. The fox on the label stayed. The philosophy stayed. The quality kept climbing. Les Chassagnes comes from a single vineyard in Buvilly just outside Pupillin — vines planted in 1990 on iridescent Keuper marl from the Triassic period, east-facing, directly pressed as whole bunches. The 2018 juice moved between foudres, a 500-litre barrel, and a tank over six years of topping up — an ouillé élevage of exceptional patience — before bottling in 2024 with no fining, filtration, or added sulphur.
Non-oxidative Savagnin at this level of age is a rare thing. The wine is singing.
