Elisa and Rubén’s own estate vines on the limestone plateau outside Cuéllar, where poor white calcareous marl soils and 890 metres of altitude push the vines hard and slow everything down. Tempranillo and Merlot, 40 years old, 5,000 vines per hectare at 3,500kg/ha. Hand-harvested in late September, fermented separately in stainless steel with indigenous yeasts, then moved into a mix of 225, 400, and 600-litre barrels for 12–16 months depending on how the wine develops. Cold stabilised, 3,400 bottles made.
At 14.5% this is the fullest, warmest wine in the Malaparte range — the plateau limestone giving it structure and mineral depth that keeps the alcohol in check.
Tasting Notes
Aroma: dark cherry, blackcurrant, dried herbs, subtle chalk mineral note
Palate: full, concentrated, firm tannins, earthy limestone depth
