Late-harvested for full ripeness at low alcohol, fermented spontaneously in used 500-litre oak barrels, aged six months in barrel then rested in stainless steel before bottling unfiltered. Dominik wrote his thesis on this exact vineyard at Geisenheim — he counted 23 different yeasts at work during fermentation.
