Hand-harvested in early September, fermented spontaneously in stainless steel with indigenous yeasts, then moved into a Flextank concrete egg where it spends 24 months on its full lees. The egg’s oval shape keeps the lees in constant gentle movement, building texture and complexity without adding flavour.
