Rocky, iron-rich red clay soils at 800 metres with 4,500 vines per hectare and yields of only 3,500kg\/ha. Hand-harvested in early September in 20kg crates, fermented spontaneously with indigenous yeasts in used oak barrels from 225 to 500 litres, where it stays for 11 months.
