Since 2018 he's been making natural wine here. The international varieties in the Emperic — Syrah and Cabernet Sauvignon — are treated no differently from the Garnatxa: native ferments, no sulphites, no filtration. Two years in barrel, then bottle. The goal isn't to replicate anything.
